We Baked It Ourselves With LOVE! Pumpkin brownie


Pumpkin coconut brownie!

First of all sorry for the missing "We Baked It Ourselves With LOVE" from last week! You would think that the three of us would manage a post like that also because we actually DO plan ahead and have ready to post photos of delicious baking goods all ready..for us to finish. 
But don't you worry that won't happen again. We know how your Sunday happiness largely depends on our lovely "with LOVE" posts... making the upcoming ending of the weekend soo much more bearable.

So anyway!! We hope you enjoy this great recipe as much as we did!

500g pumpkin
280g sugar
200g flour
180g desiccated coconut
2 tbsp baking soda
200g dark chocolate
150g butter
5 eggs
pinch of salt
150g white chocolate

Makes about 20 brownies!




Put half of your pumpkin in a sieve with 30g sugar and let it drain for a while. Cook the other half of your pumpkin with 30g sugar. After your pumpkin is cooked, reunite it with it's other half and blend it to a puree.  
Now go preheat your oven to180°C




Mix flour, 100g coconut and baking in a bowl. In a pot, melt the dark chocolate and butter. 
Now whisk the eggs, with the salt, until fluffy. Then add 200g of sugar.
Add the pumpkin, chocolate and flour to the egg mixture. 
Butter your baking tin and fold your batter into it. Now let bake for about 30 min. 




It's time to make the topping!! Melt the white chocolate over a water bath.
spread the chocolate over your cooled brownies and sprinkle coconut of them.
Your delicious pumpkin coconut brownies are ready!!



The don't just look tasty they also are really really good! Ohhh and they go.. oh so  well with the holiday season.
